Who’s Who

Terry Mc Coy
Terry is the proprietor and the inspirational founder of the Redbank. He is the leader of the team and the custodian of the Redbank’s sense of style. He is passionate about hospitality.
Terry has been in the hospitality business since 1966 when he left school in Wesley College in Dublin. Terry’s love of food encouraged him to travel. He experienced working in kitchens in France, Germany, Switzerland and the USA as well as Ireland. This much-travelled chef always felt the food raw materials in Ireland could not be beaten. Being in a temperate climate the island of Ireland had all the advantages to produce seafood and farming produce in rich abundance. However our population in the 1960 & 1970’s were very insular. Exposure to outside influences was limited.

The joining of the European Community (EU) changed all that. Terry was fortunate to found the Redbank in 1983 as Ireland confidence grew as it embraced its exposure to the now greatly enlarged 50-year-old EU. International travel experience by its population created a market that a chef with Terry’s experience could prosper in and the rest so to speak is history.

Terry is an avid supporter of local produce and suppliers and is always keen to try out new ideas and to make the most of them. Fresh seafood from Skerries Harbour the back bone to his menus, without limiting the vision- this man is know to go out at dawn the gather young nettles for soup and is equally appreciative of the famous farm produce of the area. The luscious vegetables of this the market gardening area of Ireland, feature large on his menus. Equally nurtured by this big hearted chef are the local millers who supply him with the stone flour for his delicious fresh brown bread and of course the farmhouse cheese- makers of Ireland who produce such mouth-watering cheeses.

Terry has represented at many international cooking competitions. He has won many awards and citations for his style of food and is recognised by reviews in most journals and guided books featuring food and accommodation.

Ross Mc Coy
Ross Mc Coy is Terry’s son. Ross has joined the Redbank team following the untimely death in 2005 of Terry’s wife and co founder of the Redbank. Ross has a degree in Marketing & Business studies.

Ross likes the Guesthouse accommodation portion of the business and takes an avid interest in the Redbank’s web site. The web site creates a great deal of valuable bedroom business for the Redbank so its importance cannot be underestimated. Exposure to the www is the way forward for the Redbank to gain international recognition for its unique style of hospitality.

Kestutis Burdulis
A native of Lativa Kes came to Ireland in 2000 as Restaurant Manager with Quinn Hotels.

In 2003 Kas made the change from the midlands in Cavan to the coast of Co Dublin. He now loves the seaside and enjoys leading the Restaurant Team at the Redbank Restaurant.

Kes is so happy in Ireland he is applying for Irish Citizenship

Aleksandra Riapolov
Alek also hails from his native Latvia. He trained as a waiter and spent sometime gaining practical experience at the Vila Aldena in Palanga.

Alek came to Ireland in 2004 and in 2005 arrived at the Redbank as a waiter. In 2006 Alex became Assistant Restaurant Manager.
